Dr. Kay’s area of research is Translational and Precision Nutrition and Health, particularly the impact of the metabolism of dietary phytochemicals from fruits, vegetables, and botanicals on human health. His research core is focused on the development of qualitative and quantitative metabolomic methodologies for establishing the contribution of dietary phytochemicals to the human metabolome. This work has led to the development of a food composition knowledge database (MetaboFood®) comprising chemical composition and metabolome data, including metabolic and disease pathway associations for supporting precision nutrition and health initiatives. Before coming to UAMS and ACH, Dr. Kay served as a David H. Murdock Distinguished Professor at North Carolina State University's Plants for Human Health Institute. Prior to his work at NCSU, Dr. Kay was an Associate Professor in the Department of Nutrition, Norwich Medical School, University of East Anglia, Norwich, UK. He received his PhD in nutritional biochemistry from the University of Guelph, Canada, and postdoctoral training in human vascular interventions and controlled dietary feeding trials at the Pennsylvania State University.
